Being burned is no excuse for continuing to punish yourself by going into a shell. Yes sometimes you will go wrong whether you hire your own staff or outsource. We have been burned many many times both by rogue clients and rogue / incompetent employees. Every time we go wrong gives us an opportunity to improve our processes. It will never be a perfect world – and by the way we are not perfect either.
If you are a small business and you want to outsource, spend a good bit of time initially in explaining your business. If you just give a person a task, he will do it but wouldn’t know why you want him to do it. Yes it will cost you more billable hours to have a business meeting with your outsourcing partner every week but you are developing a partner, not a jobber. If you can somehow afford it, request to hire a project manager also. Your prime contact then is the project manager who generally has more business knowledge than the average specialist and can bridge the communication gap between the business owner and the technician.
